Buttermilk Blueberry Pancakes

I love summer and all of the fresh fruit that is inexpensive and all around.  My kids like love blueberries.  I sometimes think they even like blueberries more than me.  Hard to believe, but it's true.  The 3 little ones will polish off an entire pound in just a couple minutes and still beg for more.  I was determined to do something with them other than just eat them plain, so I hid some and made these fantastic Buttermilk Blueberry Pancakes.  I served them with more fresh blueberries and real maple syrup.  They were a hit!

1 cup buttermilk
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 1/2 tablespoons butter, melted
1 cup fresh blueberries (I'm sure frozen would be fantastic as well)

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.  Heat a large skillet over medium heat, and coat with cooking spray (or heat a griddle to 350). Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface and the edges look dry. Flip with a spatula, and cook until browned on the other side and cooked through (the blueberries will start to bubble on the top of the pancake when they are cooked).

Cinnamon Roll Pancakes

Oh. My. Goodness! These Cinnamon Roll Pancakes are amazing! The kids love pancakes and ask for them all the time. I decided to make these awesome pancakes as a special treat a few days ago. When the little ones saw me putting the cinnamon swirl on them, they started to complain. "No Mom! We just want your normal pancakes." and "Ew. That's gross!" All reservations were gone at first bite. The kids really liked loved them. My 11 year old said these Cinnamon Roll Pancakes were the best pancakes she has EVER eaten.

1 batch pancake batter (Fluffy Pancakes or Granny's Farm Pancakes are both fantastic, or you could use a boxed mix)

1/4 cup butter, melted
1/3 cup brown sugar
1 1/2 teaspoon cinnamon

1/4 cup butter, softened
1/4 cup cream cheese, softened
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Combine melted butter, brown sugar and cinnamon in a small bowl. Mix well and set aside to thicken (it should be about as thick as toothpaste before using). Combine softened butter, cream cheese, powdered sugar and vanilla extract and mix well; set aside. Prepare pancake batter. Heat a large pan over medium heat, or a griddle to 350. Pour brown sugar filling mixture into a zip lock bag and snip off a small piece in one bottom corner. Pour 1/3 cup pancake batter onto the heated griddle or pan to form pancakes. Cook until the edges just start to look dry and there are bubbles in the center. Starting in the center of the pancake, squeeze the filling into a spiral on the top of the pancakes (stop within about 1 inch of the edge so the filling doesn't spill over the edge). Flip the pancakes and cook until the bottom is golden (the filling will spill out and be a little messy, but super yummy!)

To serve, drizzle with cream cheese glaze. Enjoy!

Granny's Farm Pancakes

Granny's Farm Pancakes are my 10 year old's favorite pancakes. I don't think it hurts that her favorite people in the world are her Granny and Papa. :) The pancakes are light fluffy and really good. I still haven't met a pancake I didn't like.

3/4 cup milk
1 cup flour
1 egg
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons oil

Combine all ingredients and whisk until smooth. Pour about 1/4 cup batter at a time onto a hot griddle. Cook until bubbles appear in the center of the pancake, then flip and cook until golden.

IHOP Pancakes

I love pancakes. I mean, I really love pancakes. I have my go-to recipe (Perfect Pancakes), but I think this may be my new favorite recipe. They come out tender, fluffy, and just plain delicious. The kids really liked them, too (especially the ones I made shaped like Mickey Mouse or their initials :)).

If I were you, I would make these pancakes NOW! Yeah, they really are that good!

1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon Baking soda
pinch of salt
1 egg, beaten
1 1/4 cups buttermilk
2 tablespoons melted butter
1/4 cup sugar

Stir together the flour, baking soda, baking powder, sugar, and salt. Mix the egg with the buttermilk and add to the flour mixture, stirring only until smooth. Add the melted butter and stir until well combined. Fry on a hot, greased griddle.

PS
Happy birthday to my little Asia! I can't believe she's already 6!

Man, I love this girl! She is sweet, sassy, and full of life. Just the way a little girl should be. :)

Puffy Pancakes

This is my 5 year olds FAVORITE meal! She love these Puffy Pancakes (aka Oven Pancakes, German Pancakes). As a matter of fact, all of my kids love them. This is one of the meals I can make and not have a single complaint! I think watching them bake is half the fun. My sweet little 5 year old likes to watch them grow in the oven. They can get HUGE!

After the Puffy Pancakes are baked I sprinkle them with powdered sugar for the kids. I like to add fresh berries to mine as well. Yum!

3 eggs
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt
2 tablespoons margarine

Preheat oven to 400. Place margarine in 7x11" baking dish and put in the oven to melt. Mix all other ingredients and pour into baking dish once butter has melted. Bake for 20 minutes on a bottom rack.

Oven Pancakes

Oven Pancakes are my 4 year olds favorite breakfast food. She asks for them everyday, at least once. She quickly discovered that you can have breakfast food anytime of the day. If she doesn't get Oven Pancakes for breakfast, she asks for them for lunch after she gets home from school. If she doesn't get them lunch, she asks for them for dinner.

When the Oven Pancakes are baking, they puff up huge! The kids like to watch them bake the last few minutes and give me reports on how huge they are.

3 eggs
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt
2 tablespoons margarine
1/2 teaspoon vanilla
1/4 cup sugar

Preheat oven to 400. Melt margarine in baking dish in the oven. Put flour, sugar and salt into a bowl. Slowly whisk in milk. Add in eggs and vanilla and whisk until well combined. Pour into 11x7 inch baking dish. Bake on a bottom rack for 20 minutes. This recipe is easily doubled and fits into an 9x13 inch pan. Serve with powdered sugar, syrup or berries and cream. We like ours sprinkled with powdered sugar.

Corn Pancakes

Here is my third and final pancake recipe. Corn pancakes! One thing that I love about these pancakes, is that the corn meal get softened so you don't break your teeth on an unsuspected, harder than rock, piece of corn meal. Have I ever mentioned that I love pancakes?

½ cup corn meal
½ cup boiling water
½ cup flour
½ teaspoon salt
1 tablespoon sugar
1 tablespoon baking powder
1 egg
¼ cup butter, melted
½ cup milk

Put corn meal in a mixing bowl and pour the boiling water over the cornmeal, stirring briskly until well blended. Slowly add milk, then remaining ingredients. Beat batter until thoroughly mixed. Cook over medium heat.

Perfect Pancakes

Pancakes are my all time favorite breakfast food. If it were up to me, I would make them every single day. For some reason, the kids don't seem to think that they want to eat pancakes every day, and, well, I just can't eat the entire batch all by myself (shouldn't anyway...). I think something must be wrong with them to not want pancakes every day. Especially when Mom makes them.

One of the things I love about this recipe is that you make up a huge bowl of the mix, and then mix up a batch anytime with no effort. If I remember right, I got the recipe from an old (okay, I'll admit it, antique is a more appropriate word) Make A Mix cookbook.

1 1/2 cups pancake mix - recipe below
1 egg, slightly beaten
1 cup water
3 tablespoons vegetable oil

Combine and mix well. Let stand for 5 minutes. Cook in hot pan.

Pancake Mix

10 cups flour
2 1/2 cups powdered milk
1/2 cup sugar
1/4 cup baking powder
1 tablespoons salt

Combine all ingredients and blend well. Store in air tight container for 6 to 8 months. Makes 13 cups.

Whole Wheat Pancakes

I was reading through my entries and thought to myself, how boring am I? Wow! Show a little personality already. In my defense, I am kinda new to this whole blogging thing, but I will try a little harder to not bore you to sleep before you even get to the recipe. Yes, bore you to sleep in the 2 whole lines before the recipe. I had a hard time getting through them too. I think I have a semi-permanent indentation of the keyboard in my forehead. I guess it serves me right for being so boring. Every time I look in the mirror I will have a nice little reminder. I do not guarantee to be un-boring (is that even a word? Guess it is now), just not as totally boring as I have been.

I love pancakes! I could eat them everyday and not get tired of them. I have 3 recipes that I absolutely love. This is one of them (thanks to the wonderful ward cookbook, without which, I would never have had this recipe). I don't make pancakes very often, maybe once a month. When I was pregnant with one of my kids (my last? I don't remember for sure, the time seems to fly by faster than I can keep track), I made pancakes probably 2 times a week, at least. I guess my oldest got tired of them, because he complains every time I make them "Mom, why do we always have to have pancakes? I want crepes." Crepes just take way to much time. Anyway, this recipe uses whole wheat. Yup, un-ground whole wheat. What a great way to use the 5 gallon buckets of wheat in my food storage.

1 cup milk
¾ cup raw whole wheat
½ cup butter or margarine
2 eggs
1 tablespoon honey
3 teaspoons baking powder
¼ teaspoon salt
½ teaspoon vanilla

Blend milk and wheat in a blender for 4 minutes. Add remaining ingredients and blend 3 minutes more. If you are using a Vita Mix or similar blender, only blend for half the time. Otherwise, you will be cleaning cooked batter off the bottom of the mixing container thing (sorry, having a brain laps. Seems to happen often....)
